Tasting Notes
Our 2002 Après is a stunning dessert wine crafted in the classic Southern French “Vin de Paille” (or “straw wine”) style. Vivid aromas of dried apricot and pineapple anticipate rich Viognier fruit flavors with hints of exotic spice. A smooth, viscous texture finishes long and clean, with lingering sweetness and refreshing acidity.
Winemaking
The grapes were hand picked at a typical sugar level, then air dried indoors for five weeks. The resulting dehydration elevated the sugars to 40.9 Brix for dessert wine production. The grapes were then whole-cluster pressed to barrel and fermented with Sauternes yeast until naturally stable. After barrel aging for 20 months, the wine was bottled without fining or filtration.
